I Would Eat That Off A Squirrel

Dinner at Phila Fusion in downtown Saratoga Springs, NY. A Philadelphia Roll (smoked salmon, cream cheese, scallions -- so classic, so creamy, so craveable), a Siam Roll (blue crab, shrimp tempura, cucumber, topped with scorched white fish, mayo, masago, and thai chile sauce -- beautifully sweet, spicy, and subtly briny), and Bibimbap (rice, spinach, beef, bean sprouts, carrots, zucchini, daikon radish, one egg cooked sunny-side-up, and sweet sesame, chile sauce served on the side -- the absolutely perfect combination of tastes, textures, and tang). And pickled ginger, and whipped, yes whipped, wasabi paste.
