Last weekend, when faced with some particularly tantalizing leftovers (pad thai and bibimbap with tofu), we realized that we simply couldn't wait for lunch or dinner to dig in. But leftovers for breakfast? Well, we did luck out since the dregs of the previous evening's dinner happened to be dishes that are actually traditionally served with egg, so really we were just freshening up the entrees. And certainly I could point out that what we deem "traditional" breakfast foods here are substantially distinct from the breakfast offerings of other countries and cultures, so our rice and soy bean leftovers were really not that great of a breakfast stretch, depending on location. But I think this technique could apply to any leftover if you really wanted it to. I'm reminded of that classic Cosby comedy routine I used to listen to on cassette tape as a child wherein Bill describes the thinking behind his breakfast preparation: there are eggs in chocolate cake. Same theory applies here. Cold pizza, excess pasta, expiring salad greens, or a lonely chicken wing? Add and egg and call it a morning.
