The letter C, as in, I'm too fffing Cheap to rent a rototiller so I thought it would be a good idea to shovel over the garden-plot by hand. Oh, the lower back pain. But I totally earned my dinner tonight: several ibuprofen and couscous with sautéed vegetables, Parmesan cheese, and fresh herbs.
Want to recreate it?
First, do some form of repetitive, dig, lift, pivot, manual labor for at least 2 hours straight (don't forget to lift with your legs!). Then, hobble into the kitchen. Cut up and saute a variety of vegetables --whatever you have in the refrigerator will work, but I used mushrooms, a green pepper, and some red onion and it looked especially pretty-- in olive oil until just tender but they should still have a little snap to them. Then cook the couscous. Consult the box for in-depth directions, but basically, use equal parts water and couscous, boil the water, throw in the couscous, immediately remove the pot from the heat and let it sit for about 5 minutes. Then fluff the couscous with a fork. Magic! Toss your vegetables with the couscous and top with some grated Parmesan cheese, scallion, and fresh parsley, if available. It's best to eat this meal in bed so you can take a little nap when you're finished.
